Serve it with a creamy dressed side salad,\u201d says Joe.<\/p>\n<h2>Ingredients (Serves 2)<\/h2>\n<\/p>\n<p>1 shallot<br \/>\n1\/2 cucumber<br \/>\n1 mozzarella ball (125g)<br \/>\n125g cherry tomatoes<br \/>\n50g baby leaf salad<br \/>\n1 tsp dried oregano<br \/>\n5g basil<br \/>\n15ml white wine vinegar<br \/>\n32g tomato paste<br \/>\n30ml mayonnaise<br \/>\n2 British chicken breast fillets<\/p>\n<figure id=\"attachment_71807\" aria-describedby=\"caption-attachment-71807\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><figcaption id=\"caption-attachment-71807\" class=\"wp-caption-text\">Joe Wicks, otherwise known as \u2018The Body Coach\u2019, has become one of the UK\u2019s most loved fitness and food coaches. Image credit: Goucho<\/figcaption><\/figure>\n<h2>Method<\/h2>\n<\/p>\n<p><strong>1.<\/strong> Preheat the oven to 220\u00b0C\/ 200\u00b0C (fan)\/ 425\u00b0F\/ Gas 7. Add the chicken breasts to a baking tray (use tin foil to avoid mess!)<\/p>\n<p><strong>2.<\/strong> Peel and finely chop (or grate) the garlic. Combine the tomato paste, chopped garlic and a pinch of the dried oregano with 1 tbsp [2 tbsp] water and a pinch of salt \u2013 this is your pizza sauce.<\/p>\n<p><strong>3.<\/strong> Drain and pat the mozzarella dry with kitchen paper. Tear the drained mozzarella into rough, bite-sized pieces Tear the basil leaves roughly.<\/p>\n<p><strong>4.<\/strong> Spread the pizza sauce over the chicken breasts. Top with the torn mozzarella. Sprinkle over the torn basil leaves<\/p>\n<p><strong>5.<\/strong> Put the tray in the oven for 15-20 min or until the chicken is cooked through (no pink meat!) and the mozzarella is melted and golden.<\/p>\n<p><strong>6.<\/strong> Whilst the chicken is cooking, chop the cherry tomatoes in half. Slice the cucumber finely, and peel and slice the shallot[s] as finely as you can. Then add the chopped cherry tomatoes, sliced cucumber and sliced shallot to a large bowl with the baby leaf salad and give it a gentle mix up \u2013 this is your mixed salad.<\/p>\n<p><strong>7.<\/strong> Combine the mayonnaise, white wine vinegar and remaining dried oregano with 1 tbsp olive oil and a pinch of salt and pepper \u2013 this is your creamy dressing.<\/p>\n<p><strong>8.<\/strong> Serve the cheesy pizza-topped chicken with the mixed salad to the side. Drizzle the creamy dressing all over the salad.
