If you go for a low sugar version, dark chocolate is actually a rich source of anti-oxidants, whilst nuts are packed with important nutrients.\u201d<\/p>\n<figure id=\"attachment_79125\" aria-describedby=\"caption-attachment-79125\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><figcaption id=\"caption-attachment-79125\" class=\"wp-caption-text\">Dr Michelle Braude shares a healthy meal packed full of festive flavours<\/figcaption><\/figure>\n<p>Here, Dr Braude shares a healthy meal packed full of festive flavours.<\/p>\n<h2>To start<\/h2>\n<\/p>\n<h3>Dairy-free creamy cauliflower Soup<\/h3>\n<\/p>\n<p>You\u2019ll have a hard time believing this soup is so low in calories and fat, and totally dairy free. <\/p>\n<h4>Ingredients<\/h4>\n<p>\n<em>Serves 8<\/em><\/p>\n<p>1 tbsp olive oil<br \/>\n900g frozen cauliflower<br \/>\n1 large onion, peeled and chopped<br \/>\n2 garlic cloves, peeled and crushed<br \/>\n1\u00bd litres of vegetable stock (made from MSG-free vegan stock powder)<br \/>\n1 cup unsweetened almond or cashew milk<br \/>\n1 tsp sea salt<br \/>\nFreshly ground black pepper, to taste<br \/>\nTruffle oil, to drizzle<br \/>\nPumpkin seeds or za\u2019atar to garnish, optional<\/p>\n<p>Variation: Stir through a tsp of ground turmeric and a sprinkling of curry powder for a delicious twist on this recipe!<\/p>\n<h4>Method<\/h4>\n<\/p>\n<p>1. Heat the oil in a large saucepan and cook the onion and garlic until translucent.<\/p>\n<p>2. Add the cauliflower and saut\u00e9 for several minutes until cauliflower softens. <\/p>\n<p>3. Pour stock over and simmer until the cauliflower is soft (around 30-40 minutes).<\/p>\n<p>4. Blend with a hand-held blender. <\/p>\n<p>5. Season with black pepper to taste and stir the almond or cashew milk through. <\/p>\n<p>6. Re-heat until just warm. <\/p>\n<p>7. Ladle into bowls and drizzle with truffle oil. Garnish with pumpkin seeds or za\u2019atar to serve.<\/p>\n<h2>The main event<\/h2>\n<\/p>\n<h3>Grilled salmon and baby potatoes on a bed of greens and barley<\/h3>\n<\/p>\n<figure id=\"attachment_79122\" aria-describedby=\"caption-attachment-79122\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><figcaption id=\"caption-attachment-79122\" class=\"wp-caption-text\">Image credit: Luke H Photographer<\/figcaption><\/figure>\n<p>A showstopper of a dish that will leave your guests asking for more.<\/p>\n<h4>Ingredients<\/h4>\n<p>\n<em>Serves 4-6<\/em><\/p>\n<p>1 whole side of salmon fillet (around 1kg), with skin removed<br \/>\n1kg baby potatoes, washed and cut in halves<br \/>\n8 cups mixed greens<br \/>\n250g cooked barley (or brown rice)<br \/>\n1 head of garlic<br \/>\n6 tablespoons olive oil divided\u00a0<br \/>\n\u00bd teaspoon dried rosemary\u00a0<br \/>\n\u00bd teaspoon salt<br \/>\n\u00bc teaspoon black pepper<br \/>\n3 tablespoons low sodium soy sauce<br \/>\n\u00bd teaspoon dried mixed herbs<br \/>\nA third of a cup of balsamic vinegar<br \/>\nSalt and pepper, to taste<br \/>\nBalsamic glaze \u2013 for drizzling <\/p>\n<h4>Method<\/h4>\n<\/p>\n<p><strong>For the salmon<\/strong><\/p>\n<p>1. Heat oven to 200\u00b0C. <\/p>\n<p>2. Toss baby potatoes with 2 tablespoons olive oil, rosemary, salt and black pepper. Cut a 1\/4 off the head of garlic horizontally, and wrap it in foil. <\/p>\n<p>3. Place potatoes and garlic on a parchment lined baking tray and roast in the oven for 40 minutes. <\/p>\n<p>4. Coat the salmon with 2 tablespoons olive oil, soy sauce, dried mixed herbs and pepper. Place on another parchment lined baking sheet and place in the oven 20 minutes before the potatoes are ready. Roast salmon for 18-20 minutes.<\/p>\n<p><strong>For the dressing<\/strong><\/p>\n<p>1. Blend together\u00a0the balsamic vinegar, remaining 2 tablespoons olive oil, salt and pepper, and squeezed out roasted garlic. If too thick add a bit of water. <\/p>\n<p><strong>Complete the dish<\/strong><\/p>\n<p>Combine a few tablespoons of dressing with the cooked barley, and the rest with the mixed greens. Arrange greens on a platter. Sprinkle the barley over the greens. With a large spatula place the salmon on the greens and barley and place the baby potatoes all the way around the salmon. Drizzle balsamic vinegar dressing over the salmon to decorate. <\/p>\n<p>Variation: You can also decorate with pomegranate seeds, flaked almonds or chopped spring onion<\/p>\n<h2>The perfect side<\/h2>\n<\/p>\n<h3>Quinoa salad with avocado, mango and pomegranate<\/h3>\n<\/p>\n<figure id=\"attachment_79123\" aria-describedby=\"caption-attachment-79123\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><figcaption id=\"caption-attachment-79123\" class=\"wp-caption-text\">Image credit: Luke H Photographer<\/figcaption><\/figure>\n<p>An incredibly versatile recipe, this salad can be served alongside the salmon, but is also substantial enough to make a delicious light lunch or dinner on Boxing Day or in early January. Quinoa is packed with protein, so with the heart-healthy fibre-filled pistachio nuts, avocado and pomegranate seeds, this salads ticks all nutrition boxes. <\/p>\n<h4>Ingredients<\/h4>\n<p>\n<em>Serves 2 as a main course, 4 as a side dish<\/em><\/p>\n<p>170g uncooked red quinoa (or regular white quinoa)<br \/>\n1 ripe avocado, diced<br \/>\n1 small ripe mango, peeled and diced<br \/>\n80g pomegranate seeds<br \/>\n20g pistachio nuts, shelled<br \/>\n4 spring onions, thinly sliced<br \/>\nA few handfuls of spinach or salad leaves <\/p>\n<h4>Method<\/h4>\n<\/p>\n<p>1. Cook the quinoa according to the packet instructions. Allow to cool slightly. Put all ingredients in a large bowl, including the quinoa and toss well to coat.<\/p>\n<h2>Pudding<\/h2>\n<\/p>\n<h3>Guilt-free chocolate protein pudding<\/h3>\n<\/p>\n<figure id=\"attachment_79124\" aria-describedby=\"caption-attachment-79124\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><figcaption id=\"caption-attachment-79124\" class=\"wp-caption-text\">Image credit: Luke H Photographer<\/figcaption><\/figure>\n<p>Using fat free yoghurt and xylitol (a natural sugar alternative), instead of sugar, you won\u2019t believe these delicious puddings are actually healthy when you taste them. <\/p>\n<h4>Ingredients<\/h4>\n<p>\n<em>Serves 1<\/em><\/p>\n<p>170g 0% Greek yoghurt<br \/>\n1 tbsp unsweetened cocoa powder<br \/>\n1 tbsp xylitol (available as Total Sweet in stores)<br \/>\n\u00bc tsp vanilla essence<br \/>\nToppings (optional): blueberries, dark chocolate chips, sliced almonds, shredded coconut, chopped walnuts<br \/>\nAgave or maple syrup \u2013 to drizzle<\/p>\n<h4>Method<\/h4>\n<\/p>\n<p>1. Mix all the ingredients together well in a mixing bowl, until the cocoa powder is fully mixed in, with no lumps left, and a smooth, pudding-like consistency is reached. Spoon into a serving bowl. Top with toppings of your choice. Drizzle agave or maple syrup.<\/p>\n<p>2.
